With several adaptations (anyone would think we have cooked it a lot now to have started knowing how we like to change it!)

  • 225g vitalite
  • 570g caster sugar
  • 230g water
  • 340g plain flour
  • Orgran egg replacer  – 4 eggs worth
  • 2 TSPs bicarbonate of soda
  • ½ tsp baking powder
  • 120g cocoa

sorry not as many pictures with this recipe as I had an assistant!

Preheat the oven to 180C

Cream together the vitalite and caster sugar

In a 2nd bowl mix cocoa and water

Add the egg replacer a bit at a time to the creamed mix

Stir in the cocoa mix

Fold in the flour, bicarbonate of soda and baking powder

Put in baking tins or small cake cases and bake, it can take between 12minutes and 30minutes depending on whether you are making small cupcakes or a couple of huge cakes, so I will leave you to judge for yourself on this one!

just some of the cakes we have made with this recipe
