The chocolate fudge was really easy to make, Duncan who has made (or maybe just seen his mum make) said it was really difficult to make, but it seems when you have to use cheat recipes (free from certain things) it’s easier.
- 250g Icing Sugar
- 1 Tablespoon Cocoa
- 50g marshmallows
- 20g Vitalite
- 1 Tablespoon oatly cream
- ½ Teaspoon vanilla essence
- Vegetable oil for greasing tin
These were the quantities that I was given, but I decided to use double, hence the picture of 2 greased and lined tins, one was more than enough!
In one bowl place the icing sugar and cocoa
In another bowl melt the marshmallows, vitalite, cream and vanilla essence, I wasn’t sure if I could do this just in a saucepan, so decided to do it in a bowl over boiling water, if anyone knows whether it is ok to do it straight in a saucepan I would be interested to know.

Add the wet ingredients to the dry and beat well, I did it with an electric whisk.
Pour into a greased and lined tin, then leave for at least a couple of hours.
Cut into pieces and enjoy
