Fairy Cakes

For this recipe I used vitalite as the dairy free spread

200g vitalite


200g Caster sugar


cream together


4 eggs beaten and mixed in throughly






200g self-raising flour, the recipe didn’t say it needed to be sieved, just to fold in gently








split evenly between cake cases



cook at 180°C for 15-20minutes until golden brown



The boys both tried one after tea, Tim couldn’t get enough, Sam’s comment was

‘more in the kitchen mummy’

so I take that to be a success
